Rosemary Lamb Popsicles

I always enjoy lamb chops, but rarely make them at home. It always seems like more of a special occasion cut, maybe its because its a bit more expensive than common cuts of beef and pork, or merely because of its size. But dont let that put you off because a small portion of lamb can be just as filling as a large steak, its bountiful flavor makes up for its size.

 

This rosemary lamb popsicles with mint gremolata recipe is so quick and simple, that I’m sure it will makes its way into your dinner agenda once you have tried it.

INGREDIENTS

1 French-cut rack of lamb (about 8 rubs)
1 tsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped and divided
2 large garlic cloves, minced
3 tbsp balsamic vinegar
1/4 cup panko breadcrumbs
Freshly ground pepper
1/2 cup fresh mint, finely chopped
3 tbsp garlic, finely minced
2 tbsp fresh lemon peel, finely grated
