Palais Coburg in Vienna is a an ornate sight to behold. But while the exteriors and decor scream classic noble European, old world luxury, the food at Silvio Nikol‘s Michelin starred restaurant isas modern as can be.

 

Originally built in 1840-1845 as the residence of Prince Ferdinand of Saxe-Coburg-Gotha, who was related to Queen Victoria and Prince Albert, the palace underwent a massive renovation and re-opened in 2003 as a luxury 5-star hotel.

 

The restaurant was added later in 2011. And for good reason. Nickol’s ultra refined take on classic local fare has critics and patrons singing his praises. The restaurant also boasts an astonishing 60,000 bottle wine collection.
