Most of us have childhood memories of Milo, the sweet, crunchy and slightly salty malt powder stirred into a glass of milk for a nutritious “energy drink.” Now this recipe for a Milo Ice Cream Cake, while not one might call ‘nutritious,’ is bound to make any kid at heart perk up. Inside layers of moist chocolate cake is a vanilla ice cream filling, while outside is hot and gooey chocolate sauce. In this dessert, you butter and toast the Milo into “crumbles” before folding it into the creamy center and sprinkling all over the molten chocolate drizzle. A Milo inside-out cake, if you will.
INGREDIENTS
For the Chocolate Malt Cake
1 ¼ cups plain flour
1 ½ cups caster sugar
½ cup malt powder (Horlicks, Ovaltine)
¼ cup cocoa
1 tsp baking soda
1 ½ cups boiling water
2 eggs
½ cup canola oil
For the Milo Crumbs
1/3 cup flour
1/3 cup milk powder
1/3 cup Milo
1/3 cup cocoa
1 tsp salt
1 tsp cornflour
6 tbsp butter
1 liter vanilla ice cream
For the Malted Hot Fudge
1/3 cup cream
¼ cup water
¼ cup malt powder (Horlicks, Ovaltine, Milo)
6 oz dark chocolate
1 tbsp glucose or light corn syrup
