Cochon555 was a star studded pork-centric extravaganza. This 10 city pork contest kicked-off at Pier 60 in Chelsea and involved the city’s leading female chefs: Elizabeth Falkner (Krescendo), Leah Cohen (Pig and Khao), Shanna Pacifico (Back Forty West) , Missy Robbins (A Voce), and Alex Guarnaschelli (Butter). The new “Princess of Porc,” and my personal favorite of the night was Missy Robbins. the A Voce team was dishing out fabulous amuse like: prosciutto cotto, polpetti meatballs, bacon-filled tortollini, and pig’s head terrine. I hung around to try them all and it was worth it! Chefs created sustainable nose to tail bites and transformed parts usually discarded into delicate morsels. The local vendors and chefs creative use of pork make this a truly memorable event.
