When I post about chocolate cake, it is really a subliminal message, that I am revealing today -to all my people, that is saying “bake me a cake!”. Baking is something I rarely do. If you have ever tried to bake a chocolate cake, you know how much sugar and butter goes into it, and though I am not so extreme about my eating habits, it really takes the pleasure out of fully indulging in it. Somehow the mountain of berries atop this Chocolate Meringue Cake recipe make for a great excuse to dip into the chocolate.
Ingredients
For the cake:
– 225g dark chocolate, chopped (about 1 1/2 cups)
– 3/4 cup unsalted butter, chopped
– 2 large eggs
– 4 yolks (save the whites! You’ll use them for the meringue)
– 1/3 cup brown sugar
– 1 teaspoon vanilla extract
– 1/3 cup all purpose flour, sifted
– 1/2 teaspoon baking powder, sifted
– 1/3 cup almond meal
For the meringue:
– 4 eggs whites
– 3/4 cup super fine sugar
– 1 teaspoon white vinegar
– 2 teaspoon cornstarch, sifted
– 1 tablespoon cocoa
– 1/4 cup dark chocolate, melted
