Sometimes the most simple ingredients create the most memorable dishes. This is proven with Call me Cupcake‘s corn on the cob recipe. Just add chili garlic butter, parmesan, lime and voilà! This recipe takes one of the most common Mexican street foods, elote, and renders it healthy simply by subtracting the mayo. Ok so maybe garlic butter is a close second but at least it’s a great new way to enjoy this traditional ingredient.
For the butter:
75 g soft butter
1 clove garlic
1/2-1 tsp chili powder (or fresh chili if you prefer that)
sea salt
pepper
For the corn:
2-4 corn husks
Parmesan cheese, grated
1 lime
