The Table, located in the new URSO boutique hotel in Madrid, is the recently revamped Restaurante Cenador de Amós. A pop-up restaurant featuring a rotating succession of chefs, the restaurant is expected to exhibit the work of six of the best chefs in Spain. Over the next year, chefs from Galicia, Cantabria, Bilbao, Barcelona and Cantabria will transform The Table into pop-up versions of their own restaurants. Right now on the menu? Marinated fillet of mackerel with roasted pepper “Salmorejo”, mango tartar with large prawns and seaweed emulsion, and a foie gras and coffee jam spoon. Might be time for a trip to Madrid…
