Smokey sweet potato serves as the base for this Vietnamese inspired sandwich. Bánh Mì, which means all kinds of bread, finds its roots in French colonialism (hence the use of a baguette) and is traditionally made with pork or other meats. That said, this sweet potato version is fitting for the growing number of people interested in keeping with a veggie based diet, or for those simply looking for a lighter (cheaper) lunch option. Despite the use of sweet potato as a filler, pickled carrots and radishes, peanuts, and cilantro bring the traditional elements of Vietnamese flavors. And for a little kick there’s some jalapeño, fresh lime juice and a miso mayo. Perfection.
