Red Cabbage Soup : Pantone 268 C

Red Cabbage Soup

Cook Time: 30 min
Wait Time: 2 hours
 
1/2 lbs red cabbage
2 apples
4 tbs heavy cream
3/4 cup milk
1 tbs red wine vinegar
salt and pepper to taste
 

Preparation
 
Thinly slice the red cabbage
Peel the apples and cut into small pieces
Boil the apples and cabbage for 30 minutes (save a bit of the cabbage for garnish)
mix the cabbage and apples with a bit of the boiled water, add milk, cream and red wine vinegar.
Add the salt and pepper.
Garnish with a few strip of cabbage.
Refrigerate for 2 hours before serving.
