Manger is one of Paris’s coveted new restaurants. The 11th arrondissement is the home to this innovative new neo-bistro. A minimalist dinning room is enhanced by greenery, a muted color palette and an open floor plan. Executive chef William Pradeleix, modernly recreates the essence of a “Parisian bistro,” but has his own ideas about how to run the day-to-day.

Pradeleix may be an esteemed alum of the Connaught in London and the St. Regis in Bora Bora but some of his chefs and employees have had no prior restaurant experience at all. Manger hires and trains unemployed Parisians through an apprenticeship program. Their progression and understanding of the restaurant and cooking is something Chef Pradeleix really takes pride in. This forward concept is such a rewarding way to spread knowledge about the food we eat and to teach people a new skill. He tells CondeNast Traveler,

I find it more satisfying to see someone without kitchen experience progress than to see a trained commis chef develop.

Chef Pradeleix changes the theme of the lunch menu daily based on all the places he has traveled and worked. This exciting new restaurant is taking the city by storm and will surely be on my list of must try places in Paris.
