As the leaves turn color the craving for warm hearty meals becomes insatiable. This beautiful Roasted Radicchio and Shrimp with Warm Bacon Vinaigrette is a healthy-ish way to belly bliss. The perfect combo of bitter radicchio, sweet shrimp and tangy balsamic, all harmonized by the fattiness of the bacon. This is a simple meal leaving all mouths who cross its path utterly satisfied.


Serves 2 to 3 as a main course; 4 to 6 as a side dish


2 small heads radicchio
1/4 cup extra virgin olive oil, divided
3 tablespoons balsamic vinegar, divided
Kosher salt + freshly ground black pepper
1 pound medium shrimp, peeled and deveined
3 strips of bacon (about 3 ounces), cut into lardons
1 small shallot, minced (about 2 to 3 tablespoons)
1 teaspoon Dijon mustard
2 teaspoons maple syrup (or to taste; see note in step 5)
1 cup cherry tomatoes, halved
2 tablespoons finely chopped parsley or chives
