In Trinity College’s Science Gallery, Dublin-based design studio Design Goat curated a dinner for 20 people with chef Peter Williams. Together they designed 9 dishes around the theme of Dublin.
We wanted to create an experience in which people could Taste Dublin, past, present and future.
They designed each dish to have a certain level of interaction or visual stimulus and almost all service wear was custom-designed and built to fit the dish. Dublin’s Phoenix Park was portrayed through a Guinness encrusted Venison with Juniper Soil, wild garlic and chestnut purees,’Knacker drinking’ was pearls of Dutch Gold Larger and Bulmers Cider alongside a raw ray tartar and squid ink jelly with a sea salt foam each served on a stone borrowed from the fine beaches of Bray.
