If you cut the sugar and use wheat flour, as this recipe does, carrot cake is probably one of the healthiest desserts that you can have. Bake it into a round hole and you’ve got yourself a donut that’s not too sinful—hard to believe, we know. Cream cheese frosting and coconut sprinkles crown this “lesser evil.”

1 tsp. vinegar
3 tbsp. unsalted butter, melted
1/2 c. white whole wheat flour

1 tsp. aluminum-free baking powder
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. sea salt
1/8 tsp. nutmeg, freshly grated
