Scallop Carpaccio
Preparation Time: 10 minutes

3 Scallops (per person)
1 lime
Olive Oil
Salt and Pepper to taste
 

Slice scallop into fine, almost translucent slices.
Lay out in rosette on the plate and pour the olive oil and lime mixture.
Season with Salt and pepper.
Served chilled.

Strawberry Tart
Preparation Time : 20 minutes
Cook Time : 20 minutes
 
1 Puff Pastry
4 Tbsp Sugar
4 Egg Yolks
2 Tbsp Corn Starch
2 Tbsp Flour
2 cups Boiling Milk

Preparation
 
Bake 2 tart shells.
Gently whisk the egg yolks and sugar until obtaining a white mixture.
stir in flour and cornstarch into the egg-sugar mixture.
Add 2 cups of boiling milk. mix well.
Pour the preparation into a saucepan and cook over low heat, stirring until the cream thickens.
Let cool.
Line bottom of the cold dough with pastry cream and top with strawberries.

Stéphane Pelletier is one of the leading creative still life photographers. In an industry where still life is becoming even more of a novelty than traditional editorial photography, we look to images like these and to unravel rising trends through depiction of color, silhouette and juxtaposition.

He learned photography on his own, traveling and living in different cities such as Tokyo, Miami and San Paulo where he started as a fashion photographer working for Calvin Klein and Vogue.

Designer est by eS., Gosia Sobiczewska, just sent us her the S/S 2012 lookbook of her brand. In Sobiczewska’s bio we learn that she is an alumni of Textile and Fashion at the
Academy of Fine Arts in Lodz who worked as a costume designer for the Paris theater companies for a few years and gave a series of lectures at the International Visage and Makeup School (FAM) in Nice. So with that background its no wonder this lookbook captured my interest.

“The Spring & Summer season of 2012 is an embodiment of freshness, simplicity and the possibilities of combining different elements as well as developing a more casual style,” said the designer. I love stoic models stern gaze into the eye of the camera. But its the painted hair and dramatic makeup that are the major trend alert here!

1 cup of rice arborio
1/2 large onion finely chopped
1/2 cup of white wine
3 cups of chicken broth
1 large pinch of saffron
1 tsp of butter
1/4 cup of grated parmesan

Preparation
Bring stock to a low simmer in a medium pot.
Heat oil in a medium saucepan over medium heat for 1 minute.
Cook onion until translucent, about 3 minutes.
Add rice and a pinch of salt. Sauté until rice is translucent, 1 to 2 minutes.
Add wine and saffron; bring to a simmer, stirring, until rice has absorbed most of wine.
Add 2 ladles of stock to rice; simmer, stirring, until rice has absorbed most of stock.
Continue adding stock, allowing rice to absorb it before adding the next ladleful.
Cook until rice is al dente and mixture is a little loose. Stir in butter. Turn off heat.
Stir in grated cheese. Cover and let sit 2 minutes.
Divide among 4 bowls. Garnish each with cheese shavings, if desired.

He first made a name for himself as Australia’s king of jersey, before adding body-con to the mix, and later consolidating his unique take on luxury sportswear by pioneering the international trend for camera-quality digital prints. As the long-standing drawcard designer at Australian Fashion Week, Sydneysider Josh Goot has always been ahead of the design curve, also showing his maxi-minimalism in London and New York from time to time as he pleases.

However, on the eve of the Monday event, Goot has decided to skip showing his S/S12 collection on the Australian runway to focus on launching his next resort collection to time with the international seasons in June. So instead, we bring you a preview of S/S’s intoxicating brocade and Oriental flora prints – an extension of the designer’s A/W12 collection that saw roses heightened and repeated in colour as well as through leather quilting.

Focusing on optical illusions, summer’s mirrored life-like rose and orchid prints (again headed up in-house by Shane Sakkeus), boldly contrast with Goot’s signature crisp Italian shirting and sportswear-inspired bonded jersey  – formed from two layers of Italian jersey no less. Not to be outdone by his cotton jersey foam – aka neoprene – that’s exclusive to the brand as part of Goot’s own textile development. Mind you, textures aside, it’s his bombastic bomber jackets that have already proven to be one of the season’s best sellers in the showroom.
